I have not been ignoring you lovely people these past few days. Instead it has just been a busy few days. Baseball practice, concerts, and sleep....oh my!! Thanksgiving dinner is in the works and along with that, some homemade bread, something for dessert. So have no fear my friends there will be some posts this weekend!! For today, a fond memory of a tasty ballpark treat from Wrigley field.....

Honey Vanilla Yummy Plums
While cleaning up after dinner, I saw my pail of honey sitting on the counter looking sad and lonely. When I say 'pail of honey', I am referring to the 3kg pail of honey I picked up at the farmers' market last weekend. I started to rustle through my cupboards to see what I had on hand that I could pair with the honey. Low and behold I found my vanilla beans!!! Knowing I had plums in the fridge....I decided to make some honey vanilla plums. I guess it is really a compote or a plum sauce. Three simple ingredients!!
- plums, washed, pitted, and chopped (leave that skin on!!! It gives a great colour!)
- honey
- 1 vanilla bean, split and scraped
Place the chopped plums in a pot on medium heat. Add the seeds from the vanilla bean and the pod. Drizzle on 1 or2 tablespoons of honey. I used 1/4 cup of honey tonight but this all depends on the ripeness of the plums and your personal tastes. Let the plums cook down, stirring occasionally. The plums will break down and become a luscious and yummy sauce.
****One of my favourite uses for honey vanilla plums is to stir them into yogurt!!

Apple Rhubarb Cinnamon/Ginger Crispy goodness
Since I am new to the blogging world, there are 2 posts today!! The pizza pops I actually made on Saturday and felt the need to share the pizza goodness with you. Yesterday my Dad brought over some apples from his friend's yard. Today, my friend from the famous blog, Whipped , made a post about rhubarb apple crisp thus reminding me that I still have rhubarb in the garden and tonight I sprung into action!! I don't follow recipes very well when it comes to apple crisp so there really aren't proper measurements.
- Wash the apples, core and wedge the apples....leave the skins on!! Use enough apples to fill your pan to the top.
- Wash and chopp some rhubarb
- Toss the apples and rhubarb with some light brown sugar, lots of cinnamon, ginger, and a big drizzle of honey (I like to mix all of this together in the pan I am going to bake it in because it means less dishes!)
- a couple of handfuls of old fashioned oats (don't you dare use quick cooking oats) about 2 cups
- about 1 cup of flour (whole wheat works fine)
- some light brown sugar
- some white sugar
- 1/2 to 3/4cup butter, cold
Spoon the mixture over the apples in the pan and pat it down.
Place the pan on a lined cookie sheet (protect that oven from spills).
Bake at 350 degrees F for 45 minutes.
Mo pizza you say?
Let's face it, kids (and adults) love pizza. Especially if it is in a convenient pocket style crust! I am not a fan of the high salt, high fat, and low flavour store bought varieties. That cute little dough man should be ashamed of himself!!
I have made these twice now and they are perfect to pack in school lunches. When I ran out of pizza filling, I used ham and cheese. There is no end to the possibities when it comes to fillings. Whatever your family likes!! When I make these, I like to do a big batch for the freezer so I have doubled the dough recipe. With this doubled dough recipe, you can make 32 tasty packets of yumminess. I have adapted the basic dough recipe from Mitch's basic dough recipe to accomodate my stand mixer. There is no need to double the filling recipe as it makes lots, but if you do run out, fill the pops with whatever you have on hand!
This is a multi step process but the results are well worth it and store well in the freezer.

Home made calzone goodness
For the filling:

For a double batch of pizza dough:
In the bowl of a stand mixer (or a large bowl if using a hand mixer), mix together
In a bowl, combine:
Place dough in an oiled bowl, cover with a tea towel and allow to rise for about an hour.
Punch the dough down and divide into 32 pieces.
***If you really want to be nerdy like I am, measure out approximately 50 grams of dough per pizza pop!
Say cheese!
I have used shredded cheese in the past but tonight I found it easier to cut the mozzarella into slices and use a couple of those in each calzone.
Press down with the left finger whil pushing up with the right finger.

- 1 large onion, chopped
- 1 green pepper, chopped
- 1 500gram stick (log??) of pepperoni, chopped
- 1 can tomato paste
- 1 can water (or enough to thin paste to desired consistency)
- 1 tbsp light brown sugar
- 1 1/2 tsp Italian seasoning
- 1 tsp oregano
- hot pepper flakes to taste
For a double batch of pizza dough:
In the bowl of a stand mixer (or a large bowl if using a hand mixer), mix together
- 2 cups warm water
- 4 tbsps yeast (you can use less if you would like but using this much yeast gives a great flavour)
- 4 tbsps honey
- 1/2 cup olive oil
In a bowl, combine:
- 7 cups flour (in the last batch I switched half of the flour for whole wheat)
- 1 tsp salt
Place dough in an oiled bowl, cover with a tea towel and allow to rise for about an hour.
Punch the dough down and divide into 32 pieces.

- Mozzarella, shredded
- Provolone, thinly sliced
- add some parmesean!
| Measure out approximately 50 g of dough |
| Roll a ball of dough into a circular shape |
| Add 2 scoops of filling |
| Top with cheese |
| Press edges together to seal. |
| Crimp the edges to keep the seal closed. |
Press down with the left finger whil pushing up with the right finger.
- Bake at 400 degrees F. for about 20 minutes or until golden brown.

Look at me, I started a blog!
Hello and welcome to the Little kitchen on prairie! This weekend my sister and I made a trip to the wonderful Farmers' Market in the South end of our city. This trip inspired a weekend of cooking and baking! I dubbed tonight's dinner the Farmers' Market dinner. I was in the mood to bake some bread so I made a batch of my favourite honey seeded loaf and turned them into buns. The fresh picked corn on the cob inspired a homemade corn chowder to have as our appetizer. The 2lb bison sirloin roast earned itself a peppercorn garlic rub roasted along with new potatoes, carrots, and onions. Of course I had to serve corn on the cob with everything. After dinner I had a look at the bananas sitting on the counter that no one had eaten last week...these were quickly turned into blueberry banana muffins.
Once I get the hang of blogging, I will get some photos posted of tasty treats as well as some photos of some baking jobs and how they get 'set up' in such a tiny kitchen. I am hoping for some kitchen renos in the near future. This should prove to be an entertaining and exciting time for my little kitchen on the prairie.
